So, when Megan and I were discussing this week’s theme, the idea* of Cheese Thumbprints came up. Tiny cheesy cookies with spicy pepper jelly? Yes please!
These are really tasty. It’s such a nice combination of the salty sharp cheddar and sweet-hot pepper jelly. Emmy Lou and Snake helped me roll the dough into balls and we managed to get 24 cookies out it. I guess they figured they helped and, therefore, deserved a really large portion of these little bites.
- 2 cups shredded sharp cheddar cheese
- 1 cup AP flour
- 6 tablespoons of unsalted butter, cut up
- 1/4 teaspoon garlic powder
- 1/2 cup hot pepper jelly
Using a food processor, blend cheese, flour, garlic powder, and butter together. Dough will initially look crumbly but keep blending until dough comes together. Wrap in plastic wrap and chill for 30 minutes. Preheat oven to 400 degrees F. Roll dough into 1 1/2 inch balls and place about an inch apart on baking sheet. Bake for 5 minutes. Remove from oven and, using your thumb or a wooden spoon handle, make an indentation in cookie. Fill each with about a teaspoon of jelly. Return to oven for another 5-7 minutes until light golden brown. Let cool and serve.
