We like a grab and go breakfast around here. Aww, who am I kidding? We’re just lazy in the mornings and prefer to have our breakfast ready to eat without any work on our parts.
This totally fit the bill for a quick breakfast (or snack.) Now, these aren’t a super healthy, good for you cereal bar. But, they are tasty little treats and the recipe makes 24 servings so yay! Just what we want: more treats! The only criticism I’ve gotten was from Emmy Lou who said she wished they tasted even more like peanut butter. Of course, she said this as she devoured one, so we obviously can’t trust her.
Peanut Butter Chocolate Chip Cereal Bars
- 4 cups crisp rice cereal
- 4 cups chocolate crisp rice cereal
- 1/4 cup butter
- 5 cups miniature marshmallows
- 1/2 cup crunchy peanut butter
- 1/4 tsp salt
- 1/2 cup mini chocolate chips
- 1/2 cup miniature marshmallows
Spray a 9X13 baking dish with cooking spray. Combine cereals in a large bowl. Melt butter in a large pot over medium heat. Add 5 cups of marshmallows, melt them slowly, stirring as little as possible. Stir in peanut butter and salt. Remove from heat and transfer the melted marshmallows to the bowl of cereal. Mix well then press into the baking dish. While still warm, sprinkle with chocolate chips and marshmallows, lightly pressing the marshmallows into the cereal to adhere. Allow them to cool then cut into small bars.
I wrapped them in plastic wrap and stored them in a dish on the counter. Like I said: Grab and go!!
